Mixed Grain Minestrone

*Soup mix can be found near dry lentil and beans in supermarket
Ingredients
- 1.5L vegetable stock
- 1 brown onion diced
- 3 cloves garlic, crushed
- 1 tin diced tomatoes
- 2 tbsp tomato paste
- ¼ cup soup mix* - soaked for 2 hours, then drained and rinsed well
- 2 celery stalks, diced
- 2 carrots, diced
- 1 swede, diced
- 1 sweet potato, diced
- 1 parsnip, diced
- ¼ head of cabbage, finely sliced
- ¼ head of broccoli, finely chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil
- Salt & pepper to taste
- Nutritional yeast to serve
Directions
Step 1
In a large stock pot over medium heat fry in olive oil the onion, garlic, celery and carrot for 3-4 mins.
Step 2
Add tomato paste and cook for 1 minute. Add tinned tomatoes, stock, soup mix, swede, sweet potato and parsnip. Lower temp to medium low and cook for 45 minutes - 1 hour or until soup mix is cooked.
Step 3
Add cabbage, broccoli and cook for ten mins until tender. Add lemon juice and season to taste.
Step 4
Serve piping hot with nutritional yeast sprinkled on top.
